Snickerdoodle Cupcakes

Holy Yumminess!
These are some of the most amazing cupcakes I have ever had.
Snickerdoodles are my favorite cookie, toss in a cupcake and tada!
These make 3 dozen cupcakes
We took them to a few families last night,
and now I am trying not to eat the rest.
Oh and did I mention the Cinnamon Butter cream Frosting?
Just stick my face in the bowl!


Snickerdoodle Cupcakes
with Cinnamon Buttercream Frosting

3 cups cake flour

1 1/4 tsp ground cinnamon

1 tsp baking powder

3/4 tsp.baking soda

1/2 tsp salt

3 sticks butter, softened,

2 cups sugar

4 large eggs

1 tsp vanilla extract

1 1/4 c buttermilk

cinnamon sugar: 1 Tbsp sugar and 1 tsp cinnamon

Oven preheat to 350 degrees. Sift together dry ingredients (except for cinnamon sugar). With paddle attachment cream butter and sugar until fluffy, about 2 -3 minutes. Add eggs one at a time beating well after each addition. Add vanilla. Alternately add flour mixture and buttermilk beginning and ending with flour. Fill cupcake pans 2/3 full. Sprinkle with cinnamon sgar mixture. Bake for 20 minutes. Cool in pan for 5 minutes and remove.

Cinnamon Buttercream Frosting

My favorite buttercream frostng. You can leave the cinnamon out for a regular buttercream.

1/2 cup butter, room temperature

3-4 cups powdered sugar

1/2 cup milk

1 tsp pure vanilla extract

1 tsp cinnamon

With the paddle attachment cream butter until smooth and creamy for 2-3 minutes. With mixer on low speed, add 3 cups sugar, milk and vanilla; mix until light and fluffy. If necessary gradually add remaining cup of sugar to reach desired consistency.

Chicken Gyros

I love me some Greek food.
Even the smell of this chicken marinating makes me crazy.

This original recipe had a recipe for pitas and taziki.
They were pretty food, but not worth the work in my opinion.
The pitas and taziki that I get at Winco are great, and it saves me a lot of time.

Greek Chicken Marinate

4 cloves garlic, smashed
Juice of 1 lemon
2 teaspoons red wine vinegar
2 tablespoons extra virgin olive oil
2 heaping tablespoons plain yogurt
1 tablespoon dried oregano
Salt and pepper
2-3 boneless, skinless chicken breasts.

Whisk all all ingredients together until smooth.
Add chicken, cover and refrigerate for at least 2 hours.

Grill up the chicken. Let rest for 5 minutes and then slice.
Wrap chicken in pita. Top with lettuce, diced tomato, cucumber, thinly sliced red onion and tzatziki sauce.

Homemade Cleaning Formulas

Last night I went to a class at church about cleaning and organizing.
They shared some homemade cleaning formulas that are cheap and easy to make.
I haven't tried them yet, but as soon as I will soon.

-All Purpose Cleaner-
(Great for glass)
1 cup white distilled vinegar
1 cup water
4 drops of essential oil(optional-for fragrance and antibacterial properties)
2 drops of liquid dish detergent

Mix together, use in a spray bottle


-Soft Scrub-
1 cup baking soda
1/4 cup liquid castile soap
2 tsp vegetable glycerin(acts as a preservative)
2-4 drops of essential oil(optional)
Mix together and store in a sealed glass jar.
Has a shelf life of about 2 years

Fruit Pizza

I am sure there are a million recipes out there for fruit pizza, but I think that mine is the yummiest.

It is super easy and delicious!

"Crust" is sugar cookie dough
"Sauce" is 1 jar marshmallow fluff and 1 container fruit cream cheese

Top with any fruit your heart desires!

Lost in the world of blogging!

Where have I been? I have been lost, lost in the world of blogging.

I got overwhelmed with life and blogging, kind of forgot and then got a little discouraged.

But I am back, I need to be back.
I have been inspired by a cookbook that I am putting together.
I am making a cookbook to give as a graduation gift to young women that I work with at church.
I have realized that I have a lot to share, and I love sharing and receiving.

So I will be back to posting on a regular basis.
Hopefully there are still a few people out there.
And if you are out there, thank you!
